HACCP (Hazard Analysis and Critical Control Points) is a systematic, preventive food-safety approach codified by the Codex Alimentarius Commission. The 2020 revision (CXC 1-1969 Rev.5) updates the General Principles of Food Hygiene and the HACCP system itself. HACCP is the foundation of every modern food-safety standard and a legal requirement for food businesses in the EU, UK, USA, and most other jurisdictions.
